FUYU PERSIMMON PUDDING

            1 cup Fuyu pulp (solf ripe fruit pureed in blender)

Add:     1 tsp baking sola (pulp will become firm)

Blend:   1 egg

            1 cup sugar

Add to Fuyu mixture

Sift or stir together:

            1 cup flour

            1 tsp cinnamon

            ½ tsp salt

            1-1/2 tsp baking powder

Blend into egg/sugar/Fuyu with:

            ½ cup milk

            1 tsp vanilla

Add:     1 tbsp melted butter or margarine

            ½ raisins, currants, or dates

            ½ chopped walnuts (optional)

Bake in 8 x 8 prepared pan or loaf pan in 325 oven for 50 to 60 minutes or until it tests done. Serve warm or cold with whipped cream, hard sauce, ice cream, lemon or bourbon sauce.
